Definitely not the authentic southern dish – a bit more mild which was appreciated by our kids.
Ingredients:
- 4-16oz. cans of kidney beans, rinsed and drained
- 1-14.5oz can of diced tomatoes, undrained (optional)
- 1 lb smoked sausage, cut into slices
- 1c chicken broth
- 3 celery ribs, sliced
- 1 large onion, chopped
- 1 green pepper, chopped
- 6 garlic cloves, minced
- 1 bay leaf
- 1/2 tsp crushed red pepper flakes
Method:
- Combine everything in the crockpot. Cover and cook on low, 8-10 hours. Stir before serving, remove bay leaf.
- Serve over hot, cooked rice.
