This is one of our standard meals for using up leftover ham.
Ingredients:
- 6c potatoes, cubed
- 1 medium onion, minced
- 1 ts salt
- 1/2lb cooked ham, cubed
- 4tb butter
- 4tb flour
- 1ts salt
- 2c milk
- 1-1/2c shredded cheddar cheese
Method:
- Layer potatoes, onion, salt, and ham.
- Melt butter in a saucepan over medium heat. Stir in flour and salt. Whisk well and cook until well combined and bubbly.
- Gradually add milk. Stir constantly. Once the mixture begins to thicken, remove from heat and add cheese, little bits at a time and stir to melt.
- Pour cheese sauce over potatoes and ham.
- cover and cook on low 6-7 hours or on high for 2-4 hours.
If you use cooked potatoes, this cooks quickly.
