These started off as a kebab type dish – ground chicken and other ingredients mixed together and formed into a ball, skewered and grilled. But mid-dish I realized I didn’t have one ingredient that was a main player and by the time I was finished searching for it the kids were starving (at least they thought they were) and I didn’t have time to get fancy with kebabs. So, I improvised with ingredients on the fly, then just made patties on the George Forman grill. I made some heart-shaped patties for my girls but they boys weren’t into that silliness so they got boring circle shaped patties. But the main point was that the improvising was a hit and everyone enjoyed them and thought they were blog worthy. So – here they are!
Ingredients:
- 1lb ground chicken
- 2tb ranch dressing
- 1/2c bread crumbs
- 1ts lemon juice
- 1 garlic clove, minced
Method:
- Mix all ingredients thoroughly, form into patties and bake (350F for about 15-20 minutes raised on a cooling rack set on a cookie sheet) or grill until cooked through. I haven’t tried it yet, but I would imagine you could also cook these on the stovetop in a greased heavy skillet over medium/medium high heat as well.
Variation:
The second time I made these I also caramelized small onion bits and garlic, added them to the ground chicken mix along with 1/4 c fresh parmesan cheese. These were also very good.
