Ingredients:
- 3tb butter
- 2 garlic cloves, minced
- 4 medium zucchini, sliced thin
- 1/2 ts thyme
- 1/4c parmesan cheese
- 2tb lemon juice
Method:
- Preheat oven to 400F
- Melt butter over medium heat in an oven-proof skillet. Once melted, add garlic and cook until it begins to soften – only about 30 seconds or so.
- Add sliced zucchini and thyme. Mix frequently until all pieces are coated with butter, then cover and bake until zucchini is soft – about 20 minutes or so.
- Remove from oven, sprinkle on parmesan cheese and sprinkle lemon juice. Enjoy!
