Greek Potatoes

This is a great side to go with greek-inspired chicken.  Or anything really.  This is another one of those things that I don’t follow a recipe for.  I sprinkle seasonings until it looks good.

Begin by preheating your oven to 425F.

Take some potatoes, peel them and cut into wedges.  Place them in a large bowl.  Sprinkle enough olive oil on them to coat them.  Add some minced garlic, oregano, salt, pepper and lemon juice to taste.   Mix it all up, add more oil if the potatoes aren’t coated well enough.  Spread them in a single layer on a cookie sheet or two.

Place in the oven and roast for 45-50 minutes, turning once sometime around the halfway point.  Usually if a fork slides in easily, they are done.

Once roasted, sprinkle feta cheese on top of them and stick them back in the oven to soften the cheese – just a few minutes.  Remove from the oven, let cool enough to avoid playing “hot potato” when you pick up a wedge, and enjoy!
