I am going to categorize this as both a breakfast and a side dish. In my house, potato pancakes are awesome as a breakfast when sided with bacon and eggs, but they are also a great side for smoked sausage.
Ingredients:
- 5 potatoes
- 1 egg
- 1/4c flour
- 2tb grated onion (squeeze liquid out)
- salt and pepper
- butter
Method:
- Shred potatoes. This is most easily done in a food processor with the shredding blade. A regular shredder done by hand will be fine, but a food processor not only makes it quicker, but gets a thicker shred which reduces the mush-factor on anything you use shredded potatoes for (unless I’m just a wimp and don’t put enough effort into shredding them over the box grater).
- Places potatoes in a bowl with egg, flour, onion, salt and pepper. Form into patties, using about 1/4c each.
- Heat a skillet over medium high heat and add 2-3tb butter. When melted and sizzling, place the patties in the pan and cook until golden brown, flip, and cook again until golden brown. Add more butter as necessary to the next batches to avoid burning.
