Breakfast Burritos

Breakfast burritos are a favorite around here for quick mornings.  They also freeze great, so you can make up a bunch, freeze them, and then heat them when you need them.

Ingredients (all of these are optional, pick and choose what you like!):

  • Pork sausage, browned
  • Eggs, scrambled
  • Onions, peppers, garlic, sauteed.
  • Hash browns, browned
  • Salsa
  • Cheddar Cheese
  • Flour Tortillas

Method:

  1. There really isn’t one.  Decide what you want in your breakfast burritos, spread filling down the center of the tortilla.  Fold the bottom third or so of the tortilla up, then roll the tortilla from one side to another to make a neat little rectangle that is open at one end.  Eat, or freeze.
  2. If freezing, wrap burritos in wax paper, then aluminum foil.  To reheat, heat in the oven as is, or remove foil and heat in a microwave for about two minutes.
