We always used to buy those long packages of breaded chicken patties that we could heat up and make a sandwich out of. They were handy for quick meals and admittedly tasty. But then I read the ingredients, and like many foods we once bought premade, we stopped buying them and I went on the search for something homemade with ingredients I could actually pronounce. This was our solution. If you don’t have a meat grinder, the first time I made these I shredded raw chicken breasts in my food processor. Perhaps not the best solution, but it worked.
Ingredients:
- 2lb ground chicken
- 2c whole wheat bread crumbs
- 1/2c milk
- 1tb dry, minced onion
- 1/2 tsp garlic powder
- 2 eggs
- 1/4 ts cayenne pepper
- 1 tsp salt
- 1/4 ts thyme
- Seasoned bread crumbs to coat patties
- 4tb butter
- 4 tb olive oil
Method:
- Combine ingredients from ground chicken down to thyme. Mix well, and refrigerate. The mixture will be sticky. Let the mixture chill about 30 minutes to an hour. If you notice the mixture is crumbly and dry, you may add more milk until it all starts to come together.
- Remove chicken mixture from the fridge and begin forming into patties. Coat the patties with bread crumbs on each side.
- Heat butter and oil over medium high heat, once skillet is hot begin cooking your patties. Approximately 7 minutes per side.
These freeze well once cooked and cooled. You can reheat in the oven at 350F for about 15-20 minutes. We enjoy these on hamburger buns with mayonnaise, lettuce and tomato.
