Crockpot baked beans

Forget about watching pots for hours to prevent burning, make your baked beans in a crockpot and let them cook all day until dinner!  Delicious beans that are filling and satisfying.

Ingredients:

  • 1lb dry beans, great white northern
  • 1lb bacon
  • 1 onion, minced
  • ¼ c tomato paste
  • ½ c brown sugar
  • ¼ c molasses
  • Vegetable broth or chicken broth
  • 1ts black pepper
  • 2ts kosher

Method:

  1. Soak beans overnight in water that covers the beans by several inches.  Rinse and drain, but reserve liquid.  Put beans into the crockpot.
  2. Cut bacon into chunks and fry bacon until brown and crisp.  Remove bacon.  Sautee the onion in the bacon grease.
  3. Add tomato paste, brown sugar and molasses to the onion and stir.
  4. Combine the reserved bean liquid and enough broth to equal 4 cups.  Add this to the onion mixture and bring to a boil.  Pour this over the beans, add bacon and cook on high 6-8 hours, or combine everything into a casserole dish and bake at 250F for 6-8 hours.
