This comes together quick because you use canned potatoes! It does use quite a selection of herbs though, so if this becomes a common side dish you may want to mix all the ingredients up in an old spice jar and sprinkle about 4.5 ts at a time over potatoes.
Ingredients:
- 1 quart of diced or halved potatoes
- 1tb butter (or so)
- 1tb olive oil (or so)
- 1-1/2tsp parsley
- 1/2 ts basil
- 1/2 ts thyme
- 1/2 ts safe
- 1/2 ts rosemary, crushed
- 1/2 ts garlic powder
- 1/4 ts paprika
- 1/4 ts black pepper
Method:
- Drain and rinse potatoes. I like to let them sit in a colander for a bit and air dry so they aren’t soggy.
- Heat oil and butter in a large skillet over medium heat.
- Add potatoes and cook for 6-8 minutes or until browned. Add the herbs and cook (stirring occasionally) until well coated and warm throughout.
